The extruded grain raw materials are highly beneficial to the fermentation process. Macromolecules such as proteins and starch are broken down into smaller molecules, including soluble sugars and amino acids, which are exactly what yeast requires in large quantities during the initial stage of fermentation. Additionally, extrusion alters the raw material's structure, significantly increasing the contact area with enzymes and yeast. This accelerates enzymatic reactions, reduces the required amounts of yeast and enzymes, shortens the fermentation cycle, and enhances the flavor.
